Once one gets past the rather orange and brainy appearance of this cheese, it proves its elegance in a snarky manner. Langres is a soft ripened cheese that is aged for four to six weeks and washed with Annatto, a seed from the South American tree, Achiote. Like many other young cheeses it has that typical soft-ripen texture: oozy ooey gooey near the rind with a chalky/cake-like center. Made in the Champagne-Ardenne region of France, it is thus intended to be paired with…surprise, Champagne! Tradition even goes that the concave center is to be filled with the bubbly upon serving.
