A Pillow or Cheese?

  • Piedmont, Italy
  • Cow/Sheep Milk
  • Style: Soft Ripen
  • Smells: Floral (Rose), Yogurt
  • Texture: Gooey, Soft Caramels
  • Taste: Yogurt, Floral, Grass/Hay
  • Finish: Rose

Every house cat’s dream pillow… Soft, yet slightly firm. Just the right size to fit the whiskers and one ear. Smells of the outside flower bed. Well, it’s a good thing I do not have a kitty at the moment, or we would battle over this small, precious cheese. Bosina is a type of Robiola, which is an Italian cheese that must incorporate two types of milk. Mostly from Piedmont (a town in Italy), these small format cheeses are luxurious and delicate. My Bosina is made from both cow’s milk and sheep’s milk; giving broth-like warmth from the cow’s milk, and a grassy richness of the sheep’s.

Enjoy Bosina after a lovely Italian dinner with a floral dessert wine, next to your favorite cuddly kitten…or with only a knife in the kitchen late at night.
